My Favorite Chili Recipe

We will start with a really easy recipe, My Favorite Chili. I know that it is supposed to be spring by now but I’m beginning to wonder if it is ever actually going to warm up. So on those chilly nights when you want a quick dinner that is no fuss, try this one. And who says you can’t have chili in the summer? The great thing about this is there is very little cleanup. It is all prepared in one pan. Additional tools required, cutting board, knife (or food chopper), spoon.

MY FAVORITE CHILI

2 pounds ground beef or ground turkey
2 cloves garlic
1 small onion
Salt to taste
1 28 ounce can crushed tomotoes
1 8 ounce can tomato sauce
Water
3 tablespoons chili powder
1 chipotle pepper in adobo sauce
1 can chili beans (optional)

Crumple and brown ground beef/turkey in a small stockpot or large saucepan (minimum 4 quart capacity).

While beef is browning, finely chop garlic and onion. A Food Chopper* makes this process even easier.
Add garlic and onion to beef/turkey mixture. Salt to taste and continue cooking until meat is completely browned. Drain excess fat and return meat to pan.

Stir in tomatoes, tomato sauce and enough water to reach consistency that you like your chili. Less water for thicker chili, more water for thinner chili. Turn heat to medium low and let simmer.

Now for the flavor. Add chili powder. Remove one pepper (or 2 if you like it hot), finely chop (again a food chopper is wonderful for this task) and add to chili.**

Allow chili to simmer for 45 minutes. Add chili beans, if desired, and simmer for 15 additional minutes.

Serve with your favorite toppings (shredded cheese, corn chips, onions, etc.)

Yield 6-8 servings.

**Chipotle peppers in adobo sauce can me found in the Mexican section of most supermarkets. Leftover chipotle peppers can be stored in the refrigerator covered for up to 2 weeks and add flavor to many other dishes. Soups, stews, casseroles that you would like to give a little kick to. And the sauce to mayo for a great chipotle mayo on any sandwich.
